This matcha is crafted with a blend of hand-picked and machine-harvested tea leaves, resulting in a slightly complex flavour profile. While it can be used for koicha (thick tea), it is best enjoyed as usucha (thin tea), where its subtle depth and refined character truly shine.
About Hekisuien
Founded over 150 years ago, Hekisuien has been dedicated to the production and sale of Uji tea since its establishment in 1867, during the final years of the Edo period. The company was founded by the first-generation Horii Kihei in Joyo, a region known for its rich tea-growing heritage. Hekisuienās matcha is renowned for its sweetness, full-bodied flavor, and umami, achieved through a meticulous aging process. The tencha (tea leaves for matcha) is carefully shaded and nurtured, then aged under controlled conditions to develop a rounded, smooth taste before being ground into matcha. As one of the earliest tea wholesalers to specialize in matcha for tea ceremonies, Hekisuien continues to uphold the highest standards of quality, crafting matcha that reflects the rich traditions of Uji tea.
Usucha (straight matcha)
- Sift 2 g (about 1 tsp).
- Add 60ā70 ml water at 70ā80°C.
- Whisk briskly in an Māmotion for 15ā20 seconds until glossy and foamy.
- Sip as is, or top with a little hot water to taste.
Matcha Latte
- SiftĀ 2ā3 g matcha.
- Whisk with 30ā40 ml hot water (70ā80°C) to a smooth, thick concentrate.
- Add 150ā200 ml hot or iced milk of choice. (Fullācream and oat both shine.)
- Sweeten with honey, sugar or maple syrup to taste
