Marukyu Koyamaen Wakatake Culinary Matcha

Wakatake is the culinary matcha that doesn't taste like a compromise. Most culinary grades exist to add colour or a faint matcha note to baked goods. Wakatake does something different. It brings real depth, genuine umami, and a vibrant green that holds through heat, fat and sugar.

Professionals reach for it when they need matcha flavour that actually survives the oven. Home bakers reach for it when they want their matcha desserts to taste like matcha.

It's also one of the few culinary grades worth drinking. Whisked into warm milk it's creamy, rich and satisfying. As a latte base it outperforms most ceremonial matchas at double the price.

Flavour
Rich and creamy with deep umami and a subtle balanced bitterness. Vibrant green colour that holds in heat. More flavour intensity than most ceremonial grades, making it ideal for recipes where matcha needs to stand out.

Best for
Baking and cooking: ice cream, whipped cream, cake batters, cookies, ganache, buttercream. Also excellent as a matcha latte base for high-volume café use or home preparation.

Culinary vs ceremonial
Most ceremonial matcha loses its character when mixed with milk, sugar or heat. Wakatake is specifically blended to perform under those conditions. The umami stays present, the colour stays vivid, and the flavour doesn't disappear into the background.

Producer: Marukyu Koyamaen, Uji, Kyoto, Japan. Founded in 1704, over 300 years of matcha expertise. Sourced from Uji in Kyoto Prefecture, where Marukyu Koyamaen oversees the entire process from cultivation to production in-house. Stone-ground to a fine powder to protect colour, aroma and flavour integrity.

Marukyu Koyamaen's history dates to the Genroku era, when the first generation Koyama Kujiro established a tea garden in Uji. Now in its eighth generation, the family has expanded from a single tea garden to one of Japan's most respected matcha producers. They participate regularly in national tea competitions and have received the Minister of Agriculture, Forestry and Fisheries Award multiple times. Their commitment to quality is not a marketing claim — it is a 300-year operating standard.

Storage
Keep in a cool, dark place away from heat, light and humidity. Seal tightly after each use. Best consumed within one month of opening.

Usucha (straight matcha)

  1. Sift 2 g (about 1 tsp).
  2. Add 60–70 ml water at 70–80°C.
  3. Whisk briskly in an M‑motion for 15–20 seconds until glossy and foamy.
  4. Sip as is, or top with a little hot water to taste.

Matcha Latte

  1. Sift 2–3 g matcha.
  2. Whisk with 30–40 ml hot water (70–80°C) to a smooth, thick concentrate.
  3. Add 150–200 ml hot or iced milk of choice. (Full‑cream and oat both shine.)
  4. Sweeten with honey, sugar or maple syrup to taste
