Primarily intended for koicha (thick tea), Saiun is bold, smooth, and richly flavoured, with subtle hints of autumn squash and cooked greens. Its umami-forward character is soft yet complex, with an underlying natural sweetness and whispers of vegetal broth. When prepared thick, a gentle chocolate-like note emerges, adding depth without bitterness.
When whisked as usucha (thin tea), the flavour softens significantly—clean, mild, and pleasant, but it’s as koicha where Saiun truly shines.
